LEXINGTON, Ky. (WKYT) – Kentucky’s first African cuisine food truck was severely damaged, in June, after a fire broke out. It caused the business to close down.
Nearly everything inside was burned. After weeks in the shop, the owner shares that the food truck is just days from being back in business.
Sandra Diba said she got the truck back earlier than she thought she would and that she’s so excited because what’s inside is even better than it was before.
It’s been a long few weeks since Diba has been able to do that.
“It’s kind of like a fresh start,” Diba said.
That’s because in June, just weeks after her grand opening, the food truck caught on fire.
“I just can’t wait to start cooking in there. The first day, I just wanted to stay in there and spend the night,” Diba said.
Diba said she stayed patient while her beloved truck was in the shop.
“This is the new burner. The old one was on this side, and it was not as strong as this. Of course, we have a new suppression system because we need that, and the griddle is brand new if you can’t tell, and this is my favorite, the deep fryer,” Diba said.
Diba said she hasn’t stopped smiling since she got her truck back. However, she said she realized she needed that time off to shift her focus elsewhere.
“With the break I had took, it helped me a lot to reflect on my life and also spend more time with my husband and the kids and friends,” said Diba.
However, Diba said she’s ready to get in the kitchen and serve some of her favorite dishes.
“That’s what I love doing,” said Diba. “I miss my customers.”
Diba said she expects a big turnout for their reopening. It’s happening next Thursday at 2 p.m. at 1718 Sharkey Way in Lexington.
“We believe that with God, it’ll even be more busy than it was before,” said Diba.
They even have a special menu item to mark the occasion.
“It’s tortilla wrap with steak on it. You can have it with steak or beef or chicken with some fries,” Diba said.
Moving forward, Diba said, they will have rules in place to avoid another setback.
“Before we leave, make sure everything is turned off and where it’s supposed to be. We’re also installing some cameras for safety reasons,” Diba said.
Diba said they want more people to have an opportunity to try their food, so sometime in October they’re going to be opening up a second food truck with the same name and same food, on Richmond Road.
The cause of the fire is still unknown.
